Rinse your beans, picking out any stones, and soak them in room temperature water for 8-12 hours. Drain the water before you cook them.
1 lb dry red beans
When you're ready to cook, chop you vegetables and sausage, and whisk together your spices in a small bowl (except the bay leaves).
1 large yellow onion, 1 green bell pepper, 4 stalks celery, 1 Tbs parsley, 1 tsp thyme, 2 tsp Tony's Creole seasoning, ½ tsp Lawry's seasoned salt, ½ tsp cayenne pepper, ¼ tsp sage, ¼ tsp black pepper
Heat the oil (and bacon grease if you use it) over medium heat in a large saucepan. Add the onions, celery, green pepper, and spices to the pan.

Cook, stirring occasionally until the onions start to soften, about 5 minutes. Add in the minced garlic and cook an additional minute.

Pour in the chicken stock, bay leaves, and the soaked beans. Bring the mixture to a boil, then reduce the heat to a simmer and cook the beans for 2 hours.

Add in the sliced andouille sausage and continue to simmer another 30 minutes.

While the sausage is cooking, prepare the rice according to the method indicated by the type of rice.
6 c cooked long grain white rice
Serve the red beans over the rice, and garnish with fresh Italian parsley.
